Hopefully you have a good plan to taper to a long-term diet once you reach your goal? So many people lose the weight and are so miserable after the hard part.

Fried/breaded eggplant "chips" from a new local restaurant, DIY topped at home with some low-sodium jar pasta sauce, chicken nuggets, and a touch of parmesan cheese. Looked like crap, but tasted pretty good for something that I slapped together from leftovers at home.....
