i take it to about 120 then let it cook itself the rest of the way through. not sure about the time. i just use a meat probe. any serious kitchen needs a good meat probe.

Lol... I don't often eat Chinese food unless I'm with the wife. The problem with Chinese food is that they like to serve the animal whole with the head and stuff. I don't find that too appetizing.

They went a little too heavy on the sauce this time, but other than that it was good as usual.
