Chicken Alfredo!
Recipe inspired by Bruno Albouze. So good! Fettuccine is a nice change from spaghetti. I used paprika, red pepper flakes and freshly ground black pepper for a nice bite of heat. Grapes for dessert. Per portion: 2-3oz fettuccine cooked al dente 1 boneless chicken breast, sautéed in EVOO and seasoned with S&P 1 onion diced 1 garlic clove minced 1tsp Dijon mustard ~2oz heavy cream ~1oz freshly grated Parmesan Freshly ground black pepper Red pepper flakes Paprika Start pasta, cook chicken breast and sauce in separate pans. Sautee onions and garlic in EVOO and butter until slightly browned. Turn off heat. Add Dijon, paprika, pepper flakes and black pepper, and mix. Add cream and most of the parmesan, mix. Using tongs add cooked pasta to sauce, add 1-2oz pasta water. Toss well. Plate pasta, add sliced chicken, garnish with sauce and remaining parmesan. Bruno blends the sauce twice and seives it for a very smooth texture. I have done that before and it is really nice. I did something today that I haven't done in years: buying lamb chops. My last experience with lamb was not favorable. Maybe I was served mutton.
My butcher mentioned that he had some on special at 50% off but I declined telling him my disdain for the taste. So he counteroffered with "take these home and follow the cooking directions and if you don't like them, toss 'em and if you do, pay me tomorrow." To make a long story boring, they were absolutely delicious. And now I'm a fan. I didn't need a knife to pull the meat off the bone. |

Had a 2 sitting dinner tonight. First was chipotle grilled shrimp with skewered veggies on the grill, and grilled artichoke with peanut aoli. Veggies were zucchini, red pepper, brussel sprouts, and heart of palm. I’d never grilled the palm before, but it turned out great. Second sitting to be shown in wine thread.
