(yes, I know, the stove needs cleaning. The counter was a victim of said simmering and has been cleaned, lol).

I had pastelón (Puerto Rican lasagna), which was a special at the nearby eclectic cultural confusion takeout place. The recipe uses sweet plantains instead of pasta, and appears to have passed the blood glucose meter test so far. Photo from a web search:

It reminded me of the Greek pastichio or moussaka that I cannot have any more because of the carbs causing sugar spikes, and I already found an online pastelón recipe using an air fryer to caramelize the plantains that I want to try so we can have it regularly.....

Did not feel like cooking tonight, and to cold to go out for dinner/takeout, so it was either microwave a frozen entre or this, so I went with this.. Tuna club sandwich and soup. Not very photogenic but filled the gut...

By the way, the better 1/2 ended up having a microwaved beef and broccoli.
