Where to go and what to do outside of NY?

Hi, girl is making me to take her somewhere on July 4th weekend... but don't know where... Any suggestions would be great! By the way this will be a 2 day/1night trip. Thanks in advance

+1 Finger Lakes - get in some track time at Watkins Glen while you're there

Catskills B&B, with some hiking/canoeing on a river or lake

VT would be a good 1 night trip, if you can find a good rec on a B&B.

Thanks for the replies... I've been to canoeing couple of times in PA, it's fun going with a group of friends, I doubt it'll be fun just me and her, lol. And we are not into hiking.
