Quinoa and avocado salad

With grilled Persian flatbread. Grapes and bluets for dessert.

A symphonic amalgamation of flavors and textures! Each fresh, good and healthy. I have made and posted this salad before. Recipe from Bruno Albouze. In his words, "So French!"

All fresh ingredients are cut into fine dice, or brunoise. This allows flavors and textures to intimately combine.

quinoa
feta
celery
onion
parsley
mango
lemon zest (sub for lemon confit)
vinaigrette of EVOO, lemon juice and honey
avocado + lime juice
salt and pepper

Garnished with Bibb lettuce, heirloom tomato and kalamata olives.
