It's Friday...!
![]() Got off by tush yesterday evening and made pizza dough with Tipo 00. Tomato paste, homemade tapenade paste. (Green and black olives, capers, garlic and EVOO) topped with diced stewed tomatoes and lots of Mozza. Yummy...! |

Ratatouille
A regular in the rotation, because it’s so good! With pan seared fish and grilled flatbread. Ratatouille is flexible and can be eaten warm, room temperature or cold. It pairs well with fish, meat, cheese and eggs. The stewed veggies have a bold but not overpowering flavor. This time I used toasted cumin seeds in addition to the common ingredient of ground cumin. The two forms of cumin give a deep and full cumin experience. Grain pairings are generally bread or basmati rice. Pasta would work also - for example a portion of ratatouille on a bed of spaghetti. Grapes for dessert. Last edited by chassis; 06-07-2024 at 10:35 PM.. |

It's a Crock pot night. Pork loin, onions, potatoes. Not a fan of pork in a crock pot, but it was a busy day.. so either takeout pizza, and I did not want the reputation of "you know who"; 😀, or something I could cook unattended... hence crock pot to the rescue.....

We went to Fratellis for dinner. I had a bowl of Maryland crab soup , crab cakes on top of mushroom caps , 14 oz crab cakes ( 2 ) , broccoli and fries. This service and food is exceptional.

we ate at Fratelli's a few times, food is definitely very good. We lived in Northern Baltimore county, only a couple miles from the PA line, so we'd go to York pretty often. Wifey's parents lived in Carroll county and we'd take them to places out that way, Westminster, Hampstead.

Family dinner guests - we had smoked brisket, potato and cauliflower gratin and salad. With fresh raspberries and kumquats.

![]() For more immediate occasions that nobody told me about, there are 2 local butchers about eqi-distant from my house. One makes a killer roast coating that I have them add to decent steaks for a change from the standard salt/pepper in a pan with butter and fresh herbs from the garden. Sunday I picked some oranges, limes, and jalepenos from the back. Squeezed them into a bowl and whisked with some honey, then places thin sliced chunk of chicken in for about 5 hours. Stir-fried in a wok with fresh zucchini, then dumped the pan of wild rice all together and made a big ol mess. Eating for lunch as well today!

Yea, bad camera angle. Probably 3/4 lb of 90% beef under that wad of cheese. Here is a side shot of a leftover speciman..
