Add dry freekeh and coat well with oil and sautéed veggies. Add water, salt and 9-spice, bring to boil constantly stirring. Reduce heat to a low boil/high simmer. Cook uncovered for 30-45 minutes until freekeh is done. Stir frequently. Freekeh when properly cooked has tender and quite firm tooth. Soft and mushy is overcooked. Spices truly need time cooking in liquid to bloom and deliver flavor. Best results are after an overnight rest in the cooked item. Undercooked spices are harsh and raw tasting. 9-spice: equal parts: Cumin Cloves Coriander Cinnamon Allspice Black pepper Nutmeg Mace Cayenne 9-spice has as many variations as there are cooks. Mine is inspired from YouTube cooks and is spice-oriented. Other combinations can be made with Levantine herbs including thyme, marjoram, oregano and more. YouTube and the internet have many freekeh recipes. Below is one I used to learn the basics. This recipe calls for meat and nuts, which would be great. "Martha", a recipe from March 1996 Martha Steward Magazine (on our honeymoon flight).
Bucatini, Olive Oil, lots of Garlic, Diced tomato, Walnut, Parmigiano-Reggiano and Basil. We used to have it all the time but tonight is the first time in over 5 years. |
