Spaghetti all’amatriciana!

Spaghetti with guanciale (pork jowl bacon), tomato passata (puree), and parm. S&P and red pepper flakes!

Really good! Fun to make. One of the best things I have eaten in a while. Fresh orange for dessert.

Apologies for the mixed units of measure!
100g spaghetti
2oz guanciale pre-trimmed weight
1/2 cup passata
1/3 cup grated parmesan
Salt, freshly ground black pepper and red pepper flakes

Trim rind off guanciale, then cut into lardons/medium dice. Fry on medium high heat in a bit of EVOO until crispy, remove guanciale and turn off heat on renderings pan. Pancetta and American thick cut rasher bacon can be substituted for guanciale.

Drop pasta into boiling salted water. After 5 minutes turn medium heat on renderings, add passata, pepper flakes, salt and black pepper, bring to active simmer.

When pasta is almost al dente (still hard in the middle, approx 5 minutes cooking time), use tongs and transfer pasta into renderings and tomato sauce. Add 1/4 cup pasta water to sauce, add 2/3 of the cheese and toss. The pasta will continue to cook.

Plate pasta and add fried guanciale and remaining cheese. Buon appetito!

Sage and green pea risotto!

I have been enjoying risotto lately….

Similar recipe as the previous ones. Changes this time include shallot in place of onion, and the addition of fresh peas and sage. Fresh peas are so much better than frozen. I also dialed back the salt by using 2 cups of chicken stock + 2 cups of water instead of 4 cups of stock.
