Great dinner! Sorry no pics, got caught in the excitement of company and timing of getting the food on the table at the same time. There are leftovers for pics...

Ballotine: whole chicken deboned (by me), stuffed with wild rice, mushrooms, leeks and onions. Gravy made with mirepoix, chicken stock, deglazed roasting pan drippings, butter and cream.

Potatoes: Baked Idaho potato shells filled with mashed potatoes with parmigiano reggiano, cream, butter, salt and pepper.

Spinach: spinach (frozen, sorry!) with homemade Béchamel sauce.

Tart: as pictured. Chocolate shortcrust pastry, filled with milk chocolate ganache thickened with egg. Chantilly ganache montée with heavy cream, white chocolate, vanilla paste and gelatin.

We had pizza from 19th Street Pizzeria here in Alta Loma: Pepperoni, Sausage, Canadian Bacon, Breakfast Bacon, Mushrooms, Onions, Green Peppers, Olives, Tomatoes, Jalapenos. Was (and still is) delicious!
