Pan seared halibut finished with herb lemon butter on a bed of asparagus and a spicy red pepper muhammara sauce (sauce made with fire roasted red pepper, calabrian pepper, harissa paste, tomato paste, roasted walnuts, paprika, cumin, garlic, lemon, pomegranate syrup)!

Risotto!
Flavor: wow! Fairly traditional risotto with onion, garlic, rosemary and chicken stock. I took the extra time at the end for mantecura - working butter and cheese into the risotto at the end to give extra creaminess and flavor. Big success! Garlic isn’t strictly traditional but I wanted some garlic, so I used it! Plan 1 hour for preparation. Risotto is a “can’t leave the stove” item if it is prepared in an uncovered pan in the traditional way. Last edited by chassis; 01-19-2025 at 05:28 PM.. |
