I will definitely adjust the seasoning, I used a seasoning recipe from a book that wasn't quite what I was looking for. I need a little more salt, and little more heat, and less celery seed.

The other thing I will do is fillet the chicken breast, to make it a more uniform thickness that will cook more evenly and quicker. I always do this when grilling chicken, but I like the try the recipe as written first.

I’m a breast man myself but thighs are great for frying if you want to experiment.

Damn, that looks good. I hadn't heard of tri tip until my son went to Cal Poly San Luis Obispo. In that college town, you could get tri tip sandwiches everywhere.

Great cut of meat - simple marinade, hit it with some smoke and you've got a meai plus some leftovers for a reasonable sized family. Santa Maria near SLO is the home of legendary tri-tip, so don't doubt they had some good stuff there.

I had to make a rare trip far outside the COVID bunker yesterday, and coincidentally there was a rare (for the northeast) Chit-Fil-A right next to where I was going. My one encounter with Chit-fil-A down south a few years ago was disappointing, so I figured that I'd give it one more try where northern workers and better water might make a difference. Nope, the sweet tea still sucked, and the sandwich was bland. I don't know what the people in the southeast see in that place. All y'all can keep it!

Popeyes, OTOH, got their chicken sandwich right IMHO (in my *hungry* opinion).....

I'm on the opposite end of the spectrum. Probably have it once a week without fail. I'm an unsweet tea guy, so can't comment on their sweet tea. But I love their sandwiches, need to put chik-fil-a sauce on it, that is key. If you're looking for more spice then get the spicy sandwich. My order without fail is either a spicy or regular sandwich (no fries, when I'm eating bad food already I try to cut something), 8ct nuggets (just the nuggets), and an unsweet tea.
