I can't find any reliable info on how this works and what it actually does.

We're about to order a 2026 X3 30i xDrive, NON M Sport. So we'll have the Standard Suspension, 19" wheels. This will be a road trip car. Is the $1250 DDC option worth it? Will it add comfort?

It upgrades your standard strut to adaptive one. The default 30i is comfortable oriented aka lots of body rolls. I suggest you test drive both version on bad pavement to see which one you like.
I should include that g45 is significantly more comfortable than g80 regardless what you configure. I own both and was shock to feel the difference at very beginning.
Is Xdrive 30 adaptive suspension?

There’s another thread I think discusses the suspension upgrade. If it works as well as the adaptive suspension in Acura RDX, it well worth the upgrade. The system reads the road ahead a tremendous # of times per second & automatically adjusts to what’s ahead. It will react differently depending on the Mode setting you are set it.
ddc wont add comfort, it adds sporty. I drive g80 with lower spring. It feels ok on the comfort side. G45 ddc definitely comfort, but less body roll than my g01. I once drove g01 with disabled ddc, it is a bouncy car lol.

Are you saying that DDC in comfort mode is not going to be less stiff than M-sport without DDC?

I am usually the biggest proponent of Adaptive Suspensions, have had them on my last 10 BMW's, it really made up for deficiencies in the stock suspension and provided a better ride that had just the right amount of sport for me to have fun and most importantly the right amount of comfort for my passengers so as to not get nauseous.

However, the G45 on the M-Sport suspension is the best feeling suspension I've ever had on a BMW, they really got this right. It is amazingly comfortable for passengers and handles like a dream too, they absolutely nailed it. I bought mine off the lot and it did not have DDC.

So, if money is an issue and you can't have both, skip the DDC and add the M-Sport package and not only will you have a car that is comfortable and on rails at the same time but it looks a lot better with the body enhancements as well. I've got the 30i on 19's which is what you're configuring as a point of reference.

The stiffness is dynamic (depends on algorithm) so that it covers the optimal stiffness in different road conditions. Yes, mostly less stiff in comfort mode, and passengers feel comfortable but not the driver to be clear. One of the good thing is less body pitch while braking.

I can't comment on the w/M-Sport vs. without M-Sport part of your question, but BMW Adaptive Suspensions make the ride softer in Comfort mode which you will likely be in 90% of the time. So DDC on the M-Sport will be softer than the M-Sport without it.

But as someone who lives in a similar pothole urban environment I can tell you that the G45 X3 30i M-Sport is absolutely great without the DDC. As they are different suspensions, I can't comment on how much softer it is on the DDC, but I can tell you that based on my 30i M-Sport in comparison to my G26 430i which does have the Adaptive Suspension, you don't need DDC on the X3 M-Sport. My X3 and my 4 Series are just as comfortable even over potholes and badly paved roads. BMW has come a long way with their suspension comfort in the last few years to the point where Adaptive Suspensions are less important IMO.

And don't forget the wheels and tires- the standard 19" ride more comfortably than larger ones and non-runflat tires are far more comfortable than runflats. It is possible that because I'm comparing runflat cars to non-runflat cars it's making a world of difference to ride comfort especially over potholes and uneven surfaces.

All that said....if you can afford the DDC and want to wait for one to be built instead of buying off the lot, do it. To test the base X3 vs. the M-Sport X3 on potholes, a test drive should be easy to arrange.
